Christopher Koetke, CEC CCE has presided as Dean of Kendall’s School of Culinary Arts since 2005. One of his first leadership acts was to lead the school onto the path toward ecological sustainability. Today, sustainability is woven throughout the curriculum and the school’s operational practices. In 2007, Kendall was the recipient of the Green Award presented by Foodservice Consultants Society International (FCSI), the first every presented to a culinary-training program.

Gale Gand, executive pastry chef and partner of the Five Diamond, four star restaurant TRU in Chicago, was named pastry chef of the year by The James Beard Foundation and Bon Appetit magazine in 2001. Host of the Food Network’s “Sweet Dreams,” Gand has appeared on “Iron Chef America”, “Martha Stewart”, Baking With Julia (Child)”, and judged Bravo’s “Top Chef.” Gand has a BFA from RIT and attended culinary school at La Varenne in Paris and is an accomplished cookbook author with seven titles to her credit, including her most recent “Gale Gand’s Brunch”, released in 2009.
